Ingredients:
1 large head cabbage, cored and shredded
2 Tbsp bacon grease
1/4 stick salted butter
2 Tbsp all-purpose flour
1/2 cup sour cream
1/2 teaspoon salt
4 Tbsp bacon crumbles
1 cup Half and Half
ground black pepper, to taste
Directions:
1. Place the bacon grease and butter in a large, deep skillet, and cook over medium heat until melted
2. Whisk in the flour until combined
3. Add sour cream, stirring until well mixed
4. Add the chopped cabbage. Sprinkle with salt. Cover and cook for ten minutes before lifting the cover
5. Stir quickly and cook for another ten minutes, covered
6. Add half and half, bacon pieces and ground black pepper. Stir to mix. Cook ten additional minutes, covered
If you don’t have bacon crumbles and bacon grease in the fridge, you can use 4 strips of thick-sliced bacon, cooked crisp and set aside to cool, and crumbled during step 5. Reserve 2 Tbsp of the bacon grease in the skillet. (This adds about 10 additional minutes to overall cook time.)
This is one of those side dishes that evoke comfort and homey, earthy, flavor while it is easy to make. This pairs really well with Creamy Creamed Corn, Cornbread, or Cornbread Casserole.
