2 (9 inch) unbaked pie crusts
7 cups peeled, cored and sliced apples
1 cup white sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon salt
2 tablespoons butter

1. Preheat oven to 450 degrees F
2. In a large bowl combine apples, sugar, flour, cinnamon, nutmeg and salt
3. Place a pie crust in the bottom of a pie plate, and use a fork to make several holes in the bottom of the crust
4. Spoon the apple mixture into the crust
5. Dot with butter and position the top crust, cut several small slits in the crust to let it vent
6. Pinch the crusts together at the edge of the plate to keep juice from leaking out, then slice off any unattractive excess
7. Cut a two or three inch wide piece of foil and cover the edges of the crust. Remove during the last 15 minutes of baking
8. Place the pie in oven and bake for 15 minutes
9. Turn oven temperature down to 325 degrees F and bake another 45 minutes, or until crust is golden brown and apples are tender.
10. Let cool at least two hours on a cooling rack before serving
