Easy Fudge


1 ¾ cups sugar
2/3 cups evaporated milk (1/2 of a regular size can)
2 tablespoon butter
1 ½ cups semi-sweet chocolate chips
25 large marshmallows
½ cup chopped pecans
1 teaspoon vanilla

Spray 8 inch square baking dish with non-stick spray; set aside.
Combine sugar, evaporated milk, and butter in a heavy 2-quart saucepan.
Bring to a boil over medium heat.  Boil 5 minutes, stirring constantly.
Remove from heat and immediately add chocolate chips, marshmallows and vanilla, stirring until chocolate and marshmallows have melted.
Stir in nuts.  Spread fudge mixture evenly into prepared dish.  Let cool and cut into squares.

I  like this fudge recipe, not only because it is so good, but because it makes a smaller batch than most fudge recipes.  If you want to make a large 9×13 inch pan of candy, you simply double the recipe.
