Ingredients for Rolls:
2 ¼ cups AP flour
3 TBSP refined sugar
1 tsp salt
1 pkg Instant Yeast (2 ¼ tsp)
½ cup water
¼ cup milk
2 TBSP unsated butter
1 large egg
Ingredients for Cinnamon Filling:
½ stick (¼ cup) unsalted butter, softened
2 TBSP ground cinnamon
¼ cup brown sugar
Ingredients for the Glaze:
1 cup confectioner’s sugar
1 tsp vanilla extract
2-3 TBSP milk
PROCESS:
1. Prepare the dough:
- In a large bowl, mix the flour, sugar, salt, and yeast together until well combined
- In a microwave-safe vessel, heat the milk, water, and butter until the butter is melted
- Stir the liquid mixture into the dry flour mixture
- Add egg and knead until the dough is no longer sticky
- Place in a lightly greased bowl and let it rest about 5 minutes
2. Prepare the filling:
- After the dough has rested, roll it out on a floured surface to about 9X15 inches, and evenly spread the softened butter on top
- Combine the cinnamon and sugar and sprinkle evenly over the dough
- Roll up the dough tightly and cut into 9 large pieces
- Place in a 9 inch square pan and cover loosely with aluminum foil
3. Preheat the oven to 200 degrees for 10 minutes
4. Turn the oven off, and place the cinnamon rolls in the oven to rise for 20 minutes
5. Leave the rolls in the oven and remove the foil covering. Turn on the oven to 375F and bake 15-20 minutes or until slightly browned
6. Prepare the glaze topping:
Combine the confectioner’s sugar, vanilla and milk together until smooth and lump free, and drizzle over the warm rolls
This is a quick an easy recipe for putting together a dessert, or breakfast roll, that goes great with milk or coffee. In fact, for a little variety, you can replace the milk with coffee in the recipe to change up the topping to something other than the typical vanilla glaze.
