Makes 12 servings in 9X13 pan
Cake Ingredients:
1 stick margarine
½ cup vegetable shortening
4 tablespoons cocoa
1 cup water
2 cups sifted flour
2 cups sugar
2 eggs
1 teaspoon baking soda
½ cup sour milk
1 teaspoon vanilla
Directions:
1. Combine 1 stick margarine, ½ cup vegetable shortening, 4 tablespoons cocoa, and 1 cup water, and bring to a boil.
2. Combine in a mixing bowl, 2 cups sifted flour and 2 cups sugar. Pour the hot mixture into the mixing bowl, and mix 1 minute on medium speed.
3. Add 2 eggs, 1 teaspoon baking soda, ½ cup sour milk and 1 teaspoon vanilla. Mix 2 minutes at medium speed. (Makes very thin batter)
4. Pour into a greased 9X13 inch pan, and bake in 400 degree oven for 25 minutes, or until done.
Fudge Icing Ingredients:
1 stick margarine
4 tablespoons cocoa
6 tablespoons milk
1 teaspoon vanilla
1 box confectioner’s sugar
Directions:
1. Combine 1 stick margarine, 4 tablespoons cocoa, 6 tablespoons milk, 1 teaspoon vanilla, and bring to a boil.
2. Remove from heat and add 1 box confectioner’s sugar.
3. Beat until desired thickness in achieved.
4. Frost the cake when both have cooled.
This was one of Gene Vaughn’s (Larry’s dad) favorite desserts. He requested it often when he and Marjorie traveled from Moberly, Missouri to visit our family in Holts Summit, Missouri during 1974 to 1979. My friends at Irwin Mortgage were always happy when I took this cake to work!
