Gooey Butter Cake
Serves 48

Cake Ingredients:
3 yellow cake mixes (We prefer Betty Crocker brand)
4 eggs, beaten
2 teaspoons vanilla

Topping Ingredients:
4 eggs, beaten
2 – 8 ounce package cream cheese, softened
2 teaspoon vanilla
2 stick butter, melted and cooled

Cake Directions:
Mix together according to instruction on the box, and press mixture into the bottom of a greased and floured hotel pan.

Topping Directions:
Pour the topping over the cake mixture and bake at 350 degrees for 40 to 45 minutes, until golden brown. Middle will be somewhat soft. Do not overly bake. With all the butter in this recipe it will easily burn on the bottom.

Lea VaughnThis is absolutely delicious! Joanna Jett gave Lea this recipe in 1975. She lived across the street from us in Holts Summit, Missouri. She and I were charter members in a Beta Sigma Phi Chapter, Rho Zeta, for a number of years, and Larry was the community’s first elected mayor. This recipe has been a family favorite since then, and I have passed it on to lots of friends. Our son, Lance, used to ask for this cake for his birthdays, well into adulthood. By the way, there is a chocolate version, too!
