Ingredients:
1 cup white sugar
½ cup light Karo syrup
Dash of salt
1 cup raw peanuts
1 teaspoon vanilla
1 teaspoon butter
1 teaspoon baking soda
Directions:
1. Put sugar and syrup into 8 cup glass measuring cup and microwave on high for 4 minutes.
2. Remove from oven and quickly add the salt and peanuts. Stir together and microwave on high for 4 minutes.
3. Remove from oven and quickly add the vanilla and butter. Stir together and microwave on high for 1-2 minutes (1 minute the brittle will be light in color, 2 minutes it will be darker).
4. Remove from oven and quickly add the baking soda. Stir together quickly and immediately pour onto buttered baking sheet.
5. Cool thoroughly and break into pieces.
Billiann Wilham (a good friend in Atlanta IN) gave me this recipe several years ago and it is one of our family favorites at Christmas time. It is so easy to make using the microwave! And there I thought only experts could master this candy.
