Makes about 3 dozen cookies
Ingredients:
¾ cup creamy peanut butter
½ cup butter
1¼ cups firmly packed light brown sugar
3 tablespoons milk
1½ teaspoon vanilla
1 egg
1¾ cup all-purpose flour
¾ teaspoon salt
¾ teaspoon baking soda
1/4 cup white sugar to sprinkle on top, optional
Directions:
1. Preheat oven to 375 degrees.
2. Combine peanut butter, butter, brown sugar, milk, and vanilla in a large bowl
3. Beat at medium speed with electric mixer until well blended. Add egg, beat until just blended
4. Combine flour, salt, and baking soda. Add to creamed mixture at low speed. Mix just until blended
5. Drop by heaping teaspoonfuls 2-inches apart onto ungreased cookie sheet. Flatten slightly in crisscross pattern with tines of fork
6. Bake at 375 degrees for 7-8 minutes until set and just beginning to brown. Cool 2 minutes on baking sheet
7. Remove cookies to cooling rack and sprinkle with sugar if desired
You just can’t beat freshly baked cookies, and peanut butter cookies served warm have always been a favorite around our house! These cookies taste great without the additional sprinkle of sugar at the end, but they do have some additional eye appeal with those sparkling crystals on the surface. These are good any time, but, for the youngsters, they take on a whole new dimension when served alongside a cup of hot chocolate for dipping!
