Ingredients:
3 eggs
1 cup sugar
1 teaspoon cinnamon sugar
½ teaspoon ground cinnamon
½ teaspoons nutmeg
½ teaspoon salt
2 ½ tablespoons lemon juice
2 tablespoons butter
¾ cup nuts
¾ cup raisins, soaked in water 1 hour
2 pie crusts, one cut into lattice strips
Directions:
1. Preheat oven to 350 degrees
2. Beat eggs until thick and fluffy
3. Add sugar, spices, lemon juice, and melted butter; blend well
4. Fold in nuts and drained raisins until combined
5. Pour into 9-inch pie shell
6. Add lattice top and sprinkle with the cinnamon sugar
7. Bake at 350 degrees for 30-35 minutes
This is another recipe from the Pat & Joe Stroup family. Larry and I have always loved raisin pie and this recipe uses less sugar and more fruit, is really easy to make, and certainly delivers the delicious fruity raisin flavor that makes this such a treat! Oh, and by the way, the lattice work in the photo above was done by our four year old grandson. We hope you enjoy this recipe!
