Ingredients:
Mix:
1¼ cup oil
2 cups sugar
2 eggs
½ cup dark Karo syrup
1 teaspoon vanilla
Sift together:
5 cups flour
4 teaspoons baking soda
½ teaspoon salt
2 teaspoons cinnamon
1½ teaspoons cloves
1½ teaspoons ginger
Directions:
1. Preheat oven to at 375 degrees F
2. Gradually add the flour mixture to the oil and sugar mixture stirring until mixed well
3. Roll the batter into 1 inch balls, and then roll in sugar to coat
4. Bake on ungreased cookie sheet for 10-12 minutes.
This recipe is from Opal Shipley, a good friend of the Stroup family. They lived in Iowa, and she and her husband Vern always came to the Stroup Family reunion in Monticello, Illinois each year. She is a great cook. The year she brought these cookies I could not quit eating them. This recipe makes a large batch, and you’ll be glad when you taste them.
