Serves 4-6
Ingredients:
1 pkg frozen fully-cooked Italian Pork Meatballs
4 cups chicken broth
3 Tbsp tomato paste (from tube)
2 large tomatoes, diced
1 yellow squash, halved lengthwise and sliced
1 zucchini, halved lengthwise and sliced
3 carrots, halved lengthwise and sliced
1 medium yellow onion, diced
3 ribs celery. sliced lengthwise, and chopped
1/2 green Bell pepper, diced
1 Tbsp Italian seasoning
4 Tbsp Parmesan cheese
salt and pepper to taste
Directions:
1. Stir vegetables, broth, tomato paste, and Italian seasoning together in a large skillet over medium high heat
2. Bring to a slow simmer, and add the frozen meatballs
3. Bring the broth to a slow boil, then reduce heat to medium-low, and cook until the meatballs are heated through, about 25 minutes
4. Ladle into bowls and garnish with Parmesan cheese.
