Barbequed Pulled Pork Sandwich

Serves 40-50

Ingredients:
30 pounds boneless pork shoulder roast
8 large yellow onions, peeled and coarsely chopped
4 tbsp of pork or chicken seasoning blend, or salt and pepper
5 cups apple juice
8 cups barbecue sauce

Preparation:
1. Lightly grease a large self-basting roaster
2. Preheat to 300°
3. Spread onions evenly in the bottom
4. Rub the pork with the seasoning
5. Place the roast on the onions and add apple juice.
6. Cover and roast for 3-4 hours to internal temperature of 145 F
7. Remove the roast to a large platter or racks, to cool, covered.
8. When cool, trim the fat and shred or chop the meat
9. Strain and discard the juices and put the shredded meat back into the roaster
10. Add barbecue sauce and stir to blend ingredients
11. Cover and roast on low setting until hot and bubbly (about one hour)
12. Serve on large buns with dill pickles & kosher spears, slaw, and baked beans
