Coriander Boneless Pork Chop Cubes

Serves 4

Coriander Pork CubesIngredients:
4 (3/4″)thick-cut boneless pork loin chops, cut into cubes
2 cloves garlic, crushed
2 Tbsp + 1 tsp ground coriander
2 Tbsp cracked black pepper
1 tsp Cayenne pepper
1 tsp Kosher salt
3 Tbsp Worcester sauce
1/3 cup dry red wine

Directions:
1. Combine all ingredients and marinate pork in mixture 15 minutes or more, turning frequently (meanwhile, start the couscous)
2. Fry over medium-high heat for 1-2 minutes per side, until evenly browned
3. Remove from heat, cover loosely with foil, and allow to rest for 2 minutes
4. Serve with your choice of sides

Do not overcrowd pork pieces when cooking. Leaving space between them will allow them to brown and cook more evenly. Turn frequently. Serve these delicious bites over seasoned couscous or white or brown rice.

For 4 Servings of Couscous:

INGREDIENTS:
1 Tbsp butter
1 yellow onion, finely sliced
2 garlic cloves, finely sliced and then crushed
1 cup couscous
2 cups chicken stock
2 Tbsp fresh coriander or 2 Tbsp parsley, chopped
salt and pepper, to taste

DIRECTIONS:
1. Melt butter in a 2-qt sauce pan over medium-high heat
2. Add chopped onions, and allow to cook, stirring occasionally, until soft (about 4 minutes)
3. Stir in crushed garlic and cook about one minute more
4. Add the couscous and chicken stock, stir, and bring to boil
5. Remove from the heat, cover, and allow to stand for 5 minutes
6. Add salt and pepper to taste
7. Stir in chopped coriander or parsley just before plating
