Roasted Garlic

Roasted Head of Garlic
Ingredients:
2 heads garlic, tops removed
2 tbsp extra virgin olive oil

Directions:

  1. Preheat oven to 200 degrees F.
  2. Place garlic heads in a small roasting dish and drizzle with extra virgin olive oil.
  3. Roast for about 1 1/2 hours or until soft.
  4. Let cool before squeezing the pulp out.

For the grill:

  1. Place each garlic head on a piece of aluminum foil large enough to wrap the head loosely.
  2. Drizzle with extra virgin olive oil.
  3. Bring the foil up around the top of the head and twist to close the foil.
  4. Place on your grill away from direct flame and cook until soft (40 minutes to 1 hour).
  5. Let cool before squeezing the pulp out.

This roasted garlic is excellent when spread like butter on a slice of grilled, toasted bread.
