Ingredients:
1 head cauliflower
1 bunch broccoli
1 medium red onion (I sometimes use yellow onion)
1 green bell pepper (I use orange, red, yellow, or green)
1 small jar pimento
1 cup mayonnaise
½ cup vegetable oil
1/3 cup cider vinegar
½ cup sugar
¼ teaspoon black pepper
¼ teaspoon salt
Directions:
1. Cut into small pieces the cauliflower, broccoli, onion, bell pepper, pimento 2. In a small bowl, combine the mayonnaise, vegetable oil, vinegar, sugar, black pepper, and salt
3. Pour over the cauliflower and broccoli in a large serving bowl
4. Mix well and refrigerate.
This makes a colorful salad for the holiday season, but is delicious any time of the year. Marjorie Vaughn (Larry’s mom) first made this salad in 1973 for our family Christmas dinner in Moberly, Missouri. It has been a family favorite ever since.
