Lea Mixes 50 Servings of Tangy Cole Slaw for a Fellowship Dinner
Serves 6 to 8.
Ingredients:
1 medium head green cabbage, chopped
1 medium carrot, shredded or diced
2 tbsp onion, very finely diced
1 clove garlic, crushed
4 tbsp sugar
1 stalk celery, very finely diced
¾ cup Miracle Whip Salad Dressing
½ cup cream
1/4 teaspoon ground black pepper, or to taste
salt, to taste
Directions:
1. Finely chop cabbage into a large bowl and add carrots.
2. Stir together the salad dressing, cream, sugar, onion, garlic and celery.
3. Toss to evenly distribute the dressing.
4. Taste and adjust seasonings, adding salt and pepper to taste. Refrigerate to chill thoroughly.
This is one of my favorite Cole slaw flavors, adjusted for the tropics. During one of our visits to Kailua-Kona on the Big Island of Hawaii, I wanted to create a quick and easy to assemble dressing, and decided to try Miracle Whip instead of the mayonnaise/sugar/vinegar combination I normally use. The result is a light, creamy sweet dressing.
