Slow Cooker Creamed Corn (Similar to Rudy’s BBQ in Austin TX)
1 cup heavy whipping cream
1 (8 ounce) package cream cheese, softened
1/4 cup unsalted butter
2 tablespoons white sugar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
5 cups frozen sweet corn
1. Stir whipping cream, cream cheese, butter, sugar, salt, and pepper together in a slow cooker set to High
2. Cook, stirring regularly, until the cheese and butter are completely melted, about 10 minutes.
3. Stir corn into cream mixture.
4. Cook on Low for 4 hours.
This recipe comes as close as possible to the flavor of the creamed corn at one of our favorite BBQ joints in Central Texas. It is a delicious blend of flavors that goes very well with any barbecue dish. For a spicy version see Poblano Creamed Corn.
