Green Beans with Shallots and Ham
Serves 4

¼ cup smoked ham, diced in ¼-inch cubes
1 pound fresh green beans, trimmed
¼ cup shallots, diced
1 clove garlic, finely diced
¼ tsp Kosher salt
¼ tsp fresh ground pepper
2 Tbsp unsalted butter
¼ cup rice vinegar
¼ cup water
dash of fresh ground black pepper

1. Place a large iron skillet over medium high heat
2. Melt butter
3. Saute shallots and garlic until the shallots are translucent
4. Add the rice vinegar, and stir quickly to deglaze the pan
5. Reduce the heat to medium setting
6. Add the remaining ingredients, cover, and cook 15 minutes, stirring occasionally. (Be careful not to get burned by the steam when lifting the lid).
7. Reduce the heat to low or warm until ready to serve

This simple dish is a tradition at our families’ homes, and always provides that familiar homey touch to any meal. As a variation, make this dish with your choice of smoke-flavored bacon instead of ham. 4 slices, diced, fried and drained is a substitute equal to the ham. We tend to like hickory smoked and apple-wood smoked, but any flavor will make this dish really dress up your meal.
