Ingredients:
2 tsp baking powder
1 cup flour
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 tsp dried parsley flakes
1/2 cup Romano or Parmesan cheese
2 eggs, beaten
1 large zucchini
1/3 cup whole milk
1/3 cup vegetable cooking oil
Directions:
1. Wash and slice zucchini into 1/4 inch slices
2. In a medium mixing bowl, combine the flour, baking powder, salt and pepper
3. Stir in the beaten eggs and slowly add just enough milk to make a pancake-like batter; adjust as needed
4. Dip zucchini in the batter, turning to coat. Dry 5 minutes on a cooling rack
5. Meanwhile, heat the oil to medium high in a deep-wall skillet
6. Add garlic powder and dried parsley flakes to the oil, and stir to infuse the flavor
7. Fry the zucchini slices in the hot oil to golden brown
8. Drain on paper towels
9. Sprinkle with Romano or Parmesan cheese
