Serves 4
Ingredients:
15 small cippolini onions
Extra-virgin olive oil
1/3 cup balsamic vinegar
1/2 cup honey
½ bunch thyme leaves
Pinch Kosher salt
Fresh ground pepper to taste
Directions:
1. Soak onions in hot water bath until skins loosen and peel off easily
2. Place whole peeled onions on a cookie sheet and sprinkle with olive oil
3. Combine honey, vinegar and thyme and pour over the onions
4. Salt and pepper, and place in the top third of the oven under the broiler
5. Broil until golden brown, about 5 minutes
6. Remove and place on plates as a side dish, or skewer with a toothpick to serve as an appetizer
