Roasted Pumpkin with Maple Chipotle Glaze
Makes 4 servings

1 (2 lb) pie pumpkin
1 Tbsp butter
1/4 cup onion, finely chopped
1/4 cup Chipotle peppers in adobo sauce, pureed
3 Tbsp genuine maple syrup
1/4 tsp salt
1/4 tsp curry powder

1. Preheat oven to 400 degrees
2. Bring a large pot of water to a boil
3. Cut the pumpkin into 4 wedges and drop into the boiling water. Cover pot partially
4. Boil 10-20 minutes until fork tender.
5. Remove wedges from water and place on paper towels to drain
6. Using a fork, or whisk, break down the Chipotle peppers in adobo sauce and set aside
7. Meanwhile, melt butter in a saucepan, add onion, and cook 2 minutes, or until tender
8. Stir in Chipotle sauce, maple syrup, salt, curry powder, and while stirring, heat 1 minute
9. Arrange pumpkin wedges, cut side up in a shallow baking dish. Spoon the maple glaze into cavities
10. Roast 15 minutes, or until fork tender, basting once half way through the bake. Serve hot.
