Shown with Butterflied Grilled Chicken
4 yellow beets, peeled and thinly sliced
½ cup white vinegar
1½ cups water
4 tsp sugar
½ tsp coriander
¼ tsp kosher salt
1/8 tsp fresh ground pepper
1. Combine the vinegar and water in a sauce pan.
2. Add the beets and boil until they are al dente (about 8-10 minutes)
3. Add the other ingredients and adjust the seasonings to your taste.
4. Reduce heat to a simmer, and cook 12 minutes to infuse the flavors.
