Texas Style Creamed Corn

Serves 4-6

Texas Style Creamed Corn with Bacon

2 (ten ounce) packages frozen corn, thawed
1 lb bacon (optional), cut into 1″ strips
1 cup cream
1 teaspoon salt
2 tablespoons sugar
¼ teaspoon pepper
1 cup milk
2 tablespoons flour


1. Cook bacon until crispy. Cool, then crumble and set aside
2. Combine corn, cream, salt, sugar and pepper in skillet over medium heat
3. Whisk together flour and milk and stir into corn mixture
4. Cook stirring over medium heat until mixture is thickened and corn is cooked
5. Sprinkle with crumbled bacon and serve immediately

Larry VaughnThis corn is so delicious with barbecue ribs or brisket!  Most of Texas’ best barbecue restaurants serve this style corn with coleslaw, potato salad and baked beans.  Add a few slices of bread, pickles, onions, and hot sauce; and you have a feast!  You can even add in some bacon crumbles as shown above. Don’t forget to grab a bundle of napkins, because you’re going to need them!
