Chicken Lime Cilantro Soup

Ingredients:
4 to 5 chicken breast halves
2 tablespoons oil
1 large yellow onion
3-4 green onions
2-3 garlic cloves, minced
3-4 carrots, chopped
1 (16 ounce) can petite diced tomatoes
1 large can hominy (yellow or white)
6-8 cups chicken stock
Juice of 2 limes
2 teaspoons fresh, chopped cilantro
Salt and pepper

Directions:
1. Cut chicken into cubes and saute in oil over medium high heat
2. Add onion, garlic, carrots and celery, while stirring 
3. Add remaining ingredients and bring to a simmer over medium low heat
4. Cover and simmer for 1- 1½ hours with lid just barely open
5. Add water if desired 
6. Add salt and pepper to adjust flavor to your taste

Lea Sprinkling CheeseThis is my version of a soup that I have at one of my favorite Mexican restaurants. I love the lime and cilantro flavors combined with the hominy and chicken. It’s quick and easy to put together, and is an excellent dish to take you away from the everyday doldrums.
